Vanilla cream and oats cake

After a long time of deciding, planning and adjusting recipes, I finally put together a recipe that's is just the right amount of sweetness, fruitiness and crunchiness.
I did stumble upon a few recipes that use the same kind of cream (which is by the way to die for) , but I never found a recipe that includes all of ingredients that i wanted in a cake.
So normally, I invented my own cake!



 
I have previously dabbled in experimenting with crunchy oats as base instead of using biscuits. And its amazing! It's really easy to make and so delicious. 
As for the cream part, vanilla pudding has always been my favourite ever since I was a kid. Mixed with whipped cream, it has such a smooth, fluffy texture that literally melts in your mouth. 
As for the fruit, I used my all-time favourite combo: bananas, kiwi and strawberries. They go really nice together and hold well in the actual cake.





Here is step by step preparation:
  1. For the base, mix sugar and butter in a saucepan until melted. Add in oats and stir until they start turning brown/gold. Transfer to a cake pan and pat until firm. Leave in refrigerator to chill.
  2. For the cream, make the pudding (if you use instant pudding, leave in fridge to chill) I used the one that has to be cooked. Leave it to chill until completely cold.  Then mix the whipping cream with some sugar and start combing with the pudding. Start little by little, mixing the whipped  cream into the pudding. 
  3. Layering: put a thin coat of cream on the base and put slices of strawberries across the pan. Then start putting sliced bananas, followed by a coat of cream and continue until all the fruits and cream are used. For the top layer, put all the remaining fruit in a patter you like!

This is really easy to make, and it takes about 2 hours to make  (including the time to chill). For best results, leave the cake to chill in fridge, ideally overnight, or at least a few hours so the fruit and the cream are the same temperature.


Ingredients:
Base:
  • 500g oats 
  • 100g sugar 
  • 200g butter
Cream:
  • 2 packs pudding  (cooked according to the package) 
  • 250ml of whipped cream
Fruit:
  • 2 bananas 
  • 5 kiwis 
  • Around 10 strawberries
